Easy Breakfast Stuffed Peppers

Ingredients

  1. 1 teaspoon extra virgin olive oil
  2. 1 teaspoon unsalted butter
  3. 4 bell peppers (any color)
  4. 8 egg whites or 5 eggs with yolk
  5. 1/2 cup chopped white onion
  6. 1/2 cup chopped fresh mushrooms
  7. 1/4 teaspoon garlic powder
  8. 1/4 teaspoon onion powder
  9. 1/4 teaspoon salt
  10. 1/4 teaspoon ground black pepper
  11. 1/2 cup shredded cheddar cheese
  12. Optional toppings: all natural salsa, chopped chives

 


Instructions

  1. Blanch peppers in boiling water (see post for instructions)
  2. Dry peppers and set aside
  3. Preheat oven to 350
  4. In skillet add olive oil
  5. Saute onions and mushrooms until soft
  6. Add in eggs, butter and seasonings
  7. Scramble until eggs are fully cooked
  8. Fill peppers with egg mixture
  9. Sprinkle with cheddar cheese
  10. Bake for 7 minutes or until cheese is melted
